Replace in microwave for 2 more minutes. Preheat oven to 375 degrees. Grease muffin tins. The muffins will not rise. Put in oven for about 15 minutes or until lightly brown.

Horse Cookies #2
1 cup oatmeal
1/2 or 1/3 cup water depending on consistency, chewy or crunchy
2 to 3 baby carrots
Handful raisins or small apple chunks
1 teaspoon butter
1/3 cup brown sugar

Oatmeal Muffins

3 cups quick oats
1 Tablespoon molasses
1 Tablespoon honey
2 1/2 cups water
2 carrots, loosely cut
Peppermints (optional)

In a bowl combine oats, molasses, and honey. Mix well. Add 2 cups water. Mix and put in microwave for 4 minutes. After 2 minutes, add carrots. Continue to cook. Take out and heat your oven to 375 degrees. In a greased muffin tin, add your mixture. They won't rise, so fill them to the top. Bake until the tops are lightly golden brown. When done, remove and add a peppermint on top of each muffin. Serve when cool

Oat Carrot Cookie

A cookie thick with carrots and flavored with applesauce and molasses.

Preparation time: 15 minutes
Oven 350 degrees.
Cooking time: 18 minutes for each cookie batch
Amount: makes about 19 cookies

Ingredients:

Add all dry ingredients and mix -
1/2 (one half) cup of white flour
1/2 (one half) cup of whole wheat flour
1/4 (one quarter) teaspoon of baking powder
1/4 (one quarter) teaspoon of baking soda
1/4 (one quarter) teaspoon of salt
1/4 (one quarter) cup of granulated sugar
3/4 (three quarter) cups of uncooked regular Quaker Oatmeal

Add liquid ingredients into dry mix -
1/4 (one quarter) cup of oil
1/4 (one quarter) cup of Applesauce
1/4 (one quarter) cup of Molasses

1 1/2 (one and one half) grated carrots (which is about two large carrots, shredded). The mix will be dry at first so mix the carrots in well and keep stirring. It will moisten the ingredients.

Don't grease the cookie sheet. Roll the dough into 1-inch balls and place on cookie sheet. Be sure to let the cookies cool completely before feeding them to your horse.
